This past weekend, I had the opportunity to make the most exciting cake of the summer!

When I first meet my client, Linda, back in the spring, I just knew we would have a ball designing this cake. And a ball is what we created!! To top off all of her favorite activities and hobbies, we made a complete sphere cake to represent a globe.

This lavish, glamorous 50th birthday party was going to be over-the-top. I knew our cake needed to come up to the level of elegance this extravagant party was to have. First of all, the venue was a gorgeous private estate. Don't believe me? The home was even featured in Sacramento Magazine back in February!

My client has a real love for life. After just meeting with her, I could feel her energy and excitement for world travel, fun, and friends. With much thought, and trying to narrow down all of her favorite hobbies, we decided on the following design:

bottom tier: vintage luggage cake with stamps of her favorite travel spots

middle tier: movie reel cake- to coordinate with the Old Hollywood theme of the party

top tier: globe cake- marked with her favorite and most significant countries

decorations: mini popcorn bag cakes, ticket stubs, sugar flowers, etc

cake topper: a hand-painted Eiffel Tower, of course!!!

In hindsight, I wish had taken more detailed pictures of the cake and venue. The decor was exquisite!

(In fact, my delivery partner, aka mom, took some extra photos that I will need to snag and share soon)

Recipe Box: Guinness Chocolate Cake

With it's thick, creamy head and bold, tangy flavor, Guinness is an ever-popular dry Irish stout.

To be honest, Guinness is not my go-t0 for celebratory beverages. If it's not St. Patrick's Day or mixed with some Irish Cream, I'm not particularly interested. Unless, you bake it in a delicious chocolate cake, of course.

It is not unique to The Frosted Cake Shop to utilize beer in the kitchen. Due to its distinguished flavor, the culinary uses span from beef stew to french toast to even chocolate cake. The concept may not be original, but take a look at our take on the Guinness Chocolate Cake.

Ingredients:

1 cup Guinness stout

10 tablespoons unsalted butter

3/4 cups unsweetened cocoa

2 large eggs

1 teaspoon almond extract

1 teaspoon vanilla extract

2 cups all purpose flour

2 cups granulated sugar

2 1/2 teaspoons baking soda

Pre-heat oven to 350 degrees. Sift dry ingredients (flour and baking soda) and set aside.

Combine Guinness and butter in a medium sauce pan. Heat until butter is melted.

Over medium heat, whisk in the cocoa and sugar until combined.

Remove pan from heat.

Combine sour cream, eggs, and extract. Mix into butter/cocoa/sugar.

Whisk in dry ingredients until smooth.

Pour into prepared pans or cupcake liners. Bake until done!

Gender Reveal

When my client first approached me with this idea, I was so excited! What a creative, ingenious concept!!

A sweet gal I went to high school with contacted me about making a custom cake for her and her husband's house warming party. She wanted a cake to resemble the facade of their new home. Per her request, we would include a similar landscape, stone walkways, and their cute little red shutters.

Now here's the kicker: she wanted to use the party to announce the gender of their new baby! At this point, she did not know the sex of her lil' bun-in-the-oven either. We arranged for her nurse to contact me directly to let me know if they were expecting a baby boy or girl, so it would be a surprise for mom-to-be, too. After receiving confirmation from her baby nurse, we made our Vanilla Butter cake BLUE!!!

Now that the nurse fulfilled her job, it was time for mine. The beginnings of our House Cake.

June Brides

As June has now officially come to an end, I wanted to take a closer look at my top 3 personal favorite and most interesting cakes of the season, thus far.

First up, the lovely Gunton/Miller wedding at the Loomis Flower Farm Inn. On occasion, I happen to be honored with the task of creating a beautiful cake for a wedding that I am in attendance. A pair of my husband's great friends were wed late spring. They covered their venue with gorgeous wild flowers and hand-made accents. I even got to play "florist" by arranging the fresh freesias, hydrangeas, peonies, and ranunculus on the cake.

The 4-tier cake had alternating layers of Mocha Spice Cake with Fudge Filling and Lemon Poppy Seed Cake with Almond Buttercream Filling. The entire cake was iced in a "home-made" style with our Vanilla Italian Meringue Buttercream.

My husband was a groomsman, in a crisp gray suit and clover tie. Here is a snapshot of us enjoying the reception.

Along with custom design decor, we occasionally are able to create custom cakes and recipes as well. When a client comes to us with a special request, I see it as a new challenge. My second most interesting June Bride came to us for a 100% eggless cake. This was our first request of the sorts, and ultimately ended in a success! I now can say, YES- we do offer eggless alternatives!

The completely eggless menu only required minor adjustments. At first I was a little hesitant when I soon discovered this meant: NO fondant, NO gumpaste, and NO Italian Meringue Buttercream. My helpful bride guided me to a solution. We used Ener-G Egg Replacer in our standard cake recipes, and they turned out great!

I love, LOVE a great reception venue. In fact, I think that was the very first thing we picked when planning our own wedding. We picked the Tsakopoulos Library Galleria to hold our never-ending guest list for its extra-tall windows, multiple levels, and unconventional wedding location.

Our third cake was delivered to an equally unique venue. The Jay Jay Art Gallery is uber modern, and industrial chic. I love it! What a great idea! Even their current exhibit matched the wedding colors and decor.

Creating a Custom Cake

I am so grateful for how well-received The Frosted Cake Shop has been over the last few years. Although the idea of an all custom cake shop is not entirely original, or limited to TFCS, I have strived to create the opportunity for my west-coast friends to have a one-of-a-kind, specialty cake of their own. When creating The Frosted Cake Shop, I envisioned meeting with clients, comparing color palettes, sketching designs, and pairing their favorite flavors to create their dream cake. Each cake would be tailored to the specific wants and needs of each client. No cake would be the same.

I'd like to take this opportunity to take you all on a behind-the-scenes tour of how a custom cake is created at The Frosted Cake Shop.

We are still a fairly small, boutique shop in our comfortable midtown location. With our unconventional business hours, we still operate by appointment only. When an appointment is scheduled, the client will be able to have a one-on-one consultation with me- cake baker, designer, decorating extraordinaire! At this point, we can discuss celebration theme, colors, patterns, style, etc. Tiered, round, square, 3D? Buttercream, ganache, fondant icing? A cake sketch, by yours truly, may be provided upon request to help visualize your creation.

Not only do we strive to create stunning, awe-worthy decorations, cake flavor is equally important. All of our cakes are made-to-order with only the freshest ingredients. For weddings and large celebration cakes, we offer an extensive combination of premium cakes, fillings, and frostings. We are always experimenting to try to find new seasonal flavors and unique combinations, that are just as exclusive as the cake design and decoration. Our basic menu can be found on our website, but please inquire about your own custom cake tasting.

Once our cakes are baked, designs are sketched, and details finalized, the real art of creating begins. In the following pictures, I will take you oo the journey of one of my favorite sculpted cakes. Our dear Elephant Cake:

Varying sized layers of our Classic Chocolate Cake are stacked with our Vanilla Italian Meringue Buttercream to create the body of our elephant. Our elephant will be sitting upright on a luscious cake pillow. With careful calculation, a steady hand, and my favorite serrated knife, I get to work....

As my round cakes are transformed, I continue to visualize the final shape and consult our original design.

Gravity-defying and irregular shapes and sizes need support for stability. Notice the dowel that will help support the elephant's head. Supports are carefully calculated. We would not want to learn the hard way that our cakes are not structurally sound with a cake wreck.

The irregular shape of the elephant will require a rolled fondant covering. This process will be done in a few different steps; piecing together sections of fondant and creating a seamless finish.

At this point, the body has been completely covered. I apologize for the jump in "progress pics," I was too concentrated on the elephant head to snap pics =)

The elephant head and trunk were made from fondant-covered rice cereal. The rice cereal is much lighter than cake and can be shaped much easier. Before the fondant was set, a veining tool was used to create the natural wrinkles of the elephant skin. A couple dimples gave emotion to the face. Petal dust "blush" was used to help bring the face to life.

With some toe nails, pillow tufts, and a couple gumpaste daisies, the design is complete!

Creating a custom cake is quite a process, but the long hours and late nights are always worth it to see the happiness on a client's face.

Online Bake Sale for Japan

On April 1-2, an online bake sale was held in Sacramento to raise money for the victims of the earthquake and tsunami in Japan. The auction was made possible by local food blogger Catherine Enfield. Her blog, munchiemusings.net, covers restaurant reviews, recipes, and food events. With donations from local bakers, restaurants and fellow food bloggers, $3,834.00 was raised and donated to ShelterBox to provide shelter in disaster areas.

The Frosted Cake Shop's donation was one of our carved baseball cap cakes. The winning bid went to the Laguna Youth Baseball Major Padres and will bear their logo. Now that baseball season is here, order your own baseball cap cake with your favorite team logo.

There must be something about the cold weather that keeps me hibernating inside the bakery making yummy treats..... Now I am the first to admit that I am a sucker for the holidays and embrace every bit of the Christmas season. So far, I have baked my way into the spirit of Christmas, and have added a few new items on TFCS's menu.

In addition to our standard cupcake menu, you can find Gingerbread, Eggnog, White Chocolate- Cranberry, and Mocha Spice Cupcakes during these wintery months. Cinnamon cream cheese frosting pairs equally well with all of our holiday cupcakes =)

In addition to "cake" goods, we've been baking off various cookies, barks, brittles, etc. My favorites include our Sweet N' Salty Chocolate Bark, S'more Bark, Vanilla Peanut Brittle, and Peppermint-Fudge Sandwich Cookies.

And yes, the cake pops are here to STAY! Orders accepted all-year long!

Lastly, a gourmet twist on one of my family's favorite treats. Rice Crisp Petits Fours- iced with rich chocolate ganche and sugar pearls.

Eggnog Cupcake Deliciousness

As I type up this post, I have the pleasure of smelling freshly baked eggnog cupcakes. Helllloooo December!

These warm, moist cupcakes are gifts in themselves. I am an eggnog fan myself, but I think everyone could enjoy this seasonal treat. Try out this recipe for any holiday gathering- you will not be disappointed!

EGGNOG CUPCAKE RECIPE:

1 1/2 cups granulated sugar

1/2 cup unsalted butter, softened

3 eggs (room temperature)

1 teaspoon vanilla

1 teaspoon rum or cinnamon extract

1 cup eggnog

2 1/4 cups cake flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon ginger

1/4 teaspoon nutmeg

1/4 teaspoon ground cloves

Preheat oven to 350 degrees.

Sift dry ingredients- set aside.

Cream butter and sugar with an electric mixer (about 3 minutes).

Add extract and eggs, one at a time. Scrape down sides of mixing bowl.

With mixer on low, spoon in dry ingredients- alternating with eggnog. Mix until just combined.

For uniform cupcakes, I like to use a mechanical ice cream scoop or disher to fill my cupcake liners. Fill about 2/3 full.

Baking times may vary. Cook until a wooden toothpick come out clean when poked into center.

After they completely cool, you may ice your delicious cupcakes with just about any icing.

Vanilla Italian Meringue Buttercream

Vanilla Glaze

If you want to go the extra mile, try something with a splash of rum!

Winter Dessert Bar

As December quickly approaches, I wanted to treat you all with some new winter ideas. In this season of holiday parties and get togethers, why not spring for a dessert bar instead of traditional sweet endings?!?

This time of year surely brings out the baker in all of us. Even when I am not at the bakery, I know I am at home experimenting with new seasonal flavors and combinations. Why not display all of your hard work? With the hours spent poured over classic recipes- and the sweat, tears, and frustration baking sometimes accompanies- don't skimp by putting your beautiful creations on just any paper plate.

Pictured above is a simple dessert bar that was whipped up at TFCS studio. I love to use levels in our displays. I tend to have an eclectic style, and am not afraid to mix and match pedestals and platters. Be creative! A candle holder is perfect for a cupcakes =)

Here at The Frosted Cake Shop, we have been expanding from just our custom cakes to other individual treats. Fall Flavors + Wedding Season Wrap-Up!

If it wasn't officially before, it is definitely fall now! Be sure to order your next cake, cake pop, or cupcake in any of our delicious autumn flavors: Pumpkin Cake, Mocha Spice Cake, Apple Harvest Cake, or White Chocolate/ Cranberry Cake. All pair fabulously with either our Cinnamon Cream Cheese Icing or Maple Buttercream. Don't believe me? Go ahead- try it yourself!

Now, before I fall deep into holiday mode, I wanted to share a couple of our latest wedding cakes.

First Up: a modern twist to the tradition wedding cake.

Two square tiers of velvety vanilla cake, iced in smooth, silky buttercream. Hand-made red sugar roses decorate the top, with cascading petals down the tiers.

Now, I really can't take credit for this original creation. The mother-of-the-bride was the true artist. And really, she is- a professional sculptor and artist. The cake stand was created by the bride's mother- brozened with hand-blown glass hearts. Incredible!

I crafted multiple square cakes of various heights and sizes of Classic Chocolate, Carrot, and Tiramisu Twist Cake. Definitely a true masterpiece!

The Groom's Cake

The Groom's Cake Defined: a second cake, often whimsical in nature. can be served at either the wedding, the rehearsal dinner, or less frequently, the engagement party.

Personally, I LOVE a good groom's cake. Because we specialize in custom, non-traditional cakes here at The Frosted Cake Shop, I have really embraced our groom's cake requests. Frequently carved, shaped, colorful, and whimsical, our groom's cakes really set themselves apart from the traditional white, tiered cakes typically served at a wedding.

When it comes to weddings, I don't only think white with fresh flowers or intricate piping- but that's just me =) As some have seen from my own orange and teal wedding cake, there really are no limits to cake design. However, I do definitely understand the desire for a classic wedding cake. If you ask me, the groom's cake is an excellent way to have the best of both worlds. Here are some examples:

Okay, I may be waaay out of the loop on this one, but I have never seen Steel Magnolia. Apparently, the movie is kind of a big deal.... Anyways, bellow is our own buttercream/fudge version of the famous armadillo cake:

Now, you may have seen this pic before, but I can't leave out the groom's cake I made for my husband, Brett. Since I did not make my own wedding cake, I wanted to at least present him with his own groom's cake at our rehearsal dinner. And yes, pink with sprinkle is his favorite doughnut =)

Summer Wedding Recap

It sure has been one busy summer! It's already the end of September, and I just now finally feel like life is going back to normal- busy as usual though. This has been the first summer for weddings in the new shop. Between planning my own wedding, being a bridesmaid for my best friends, and creating cake for a few of my favorite clients, a lot of cake and creativity have been produced over the past few months.

Only my dear friend Courtney could get away with convincing me to create an all brownie wedding "cake" for her and Kirk. This was definitely new for TFCS, but we pulled off an all brownie dessert bar and cake. Although the planning gave me a headache, the end product was pretty darn cute. Nothing less for one of my very best friends!

24 hours later, we were back in the shop getting ready for the Hagan/White wedding. I was honored to create the cake for my childhood neighbor, Jeff. His new bride helped design the simple yet elegant cake. Did I mention it was HUGE?! She loved our sugar flowers, so the cake was decorated with clusters of sugar hydrangea and roses.

Did I mention yet that I got married too??

I might be biased, but Brett and I had the best wedding EVER! No, I did not make my own cake, but we had a delicious dessert bar from my favorite pastry chef, Ginger Elizabeth. If you have not yet had one of her chocolate chip cookies, stop reading and go get one!

Growing Up

Baby Charlotte Belle turned one this weekend! This not only means that lil Char is growing up, but that TFCS is still alive and kicking, too.

A year ago, I made a cute, whimsical cake for a glowing mother-to-be. The cake turned out great, and has been a popular choice in my repertoire of baby shower cakes. Not only have I expanded on the design and improved my decorating techniques, so much has changed and expanded with TFCS over this past year. As I create cakes for turnining points in my clients' lives, I begin to reflect on what this past year has meant to me...

Without getting into too much detail, this past year has definitely been a busy one....

Let's see, since this time last year TFCS has been featured in 3 local newspapers, including photos in The Sacramento Bee, batted with the big boys at various charity events- including Grange Restaurant at Luxe for Life 2009 (one of my personal favorites), made 3 TV appearances, been mentioned in several blogs, moved into a brand-new kitchen, attended class at The French Pastry School of Chicago, been featured and photographed for 3 magazines,including the latest issue of SacTown Magazine- go get your copy today!- and more.....

I don't mean to toot my own horn here, but it's definitely been a journey worth sharing =)

Alright, back to Miss Charlotte. The pic isn't much, but the cake was super cute anyways. Here is her individual ladybug "smash" cake. Would love to see what she looked after digging into this dessert!

Tahoe Wedding Weekend

Not too often does cake-making take me on adventures. However, this past weekend, I had the opportunity to create a cake for a beautiful Tahoe wedding reception. I don't usually travel with my cakes too far, but every now and then I could use a cake journey =)

By May, I was not expecting snow to still be on the ground. Fortunately for the newly weds, it was a clear and sunny day, with snow caps in the foreground- and only a small amount of snow starting to melt onto the outdoor dance floor. The sanding sugar that rimmed the cake glistened perfectly and mirrored the effects of the sun shining on the snow outside.

The cake design was created by the bride herself. I loved her ideas, and definitely thought it was 2-hour delivery-worthy. The design matched the rustic theme perfectly! Take a look!

Okay, so my photography skills are not great- and neither is my camera... the pics don't quite capture the image I'd like to portray of the glistening, snow -capped cake... but you get the idea =)

My awesome brother has graciously photographed some of my designs at the new studio. With only 100 days left until my own wedding, I have decided to release a few of his photographs. LOTS of new cakes have went out the doors of the doors of the NEW TFCS midtown cake studio. Spring has been very busy- client consultations in my new office, new sculpted/carved cakes, press for the new location, our successful open house, etc. Here's a taste of what I've been up to:

Almond Cake Recipe

I heard it was supposed to be spring time, although my view out my midtown window tells me otherwise.... Regardless, Easter is just around the corner. In honor of the special holiday and the supposed "spring time," I wanted to share my almond cake recipe with you all. I just baked a batch for a wedding cake tasting that I have this afternoon....hope I don't dig in to the scraps before my bride-to-be arrives! Soooo yuumy straight from the over!!

Ingredients:

1 1/3 cup sugar

3/4 cup almond paste

10 oz. unsalted butter, room temperature

6 eggs

1 teaspoon vanilla

1 cup all-purpose flour

1 teaspoon baking powder

1/4 teaspoon salt

Pre-heat over to 325 degrees

Sift flour, baking powder, and salt. Set aside.

Beat together the almond paste and sugar together with a paddle attachment. Be sure to beat these two ingredients together first, before the butter. The sugar granules will help smooth out the almond paste until light and fluffy. Add butter. Combine eggs and vanilla, and slightly stir to break up the yolks. While the mixer is on, gradually add the egg and vanilla mixture. Be sure to scrape down the sides of you bowl at this time. Add the dry ingredients in two batches.

Pour into prepared pans and bake at 325 degrees.

Try it. Do it. I promise you will thank me.

If I have some free time later, I plan on trying out a raspberry rosewater buttercream. I think it will pair nicely with the almond cake and will be perfect for spring!

I just had a rare, yet "heart- warming" cake experience!

Sutter Memorial Hospital had contacted me to create a cake to celebrate the lives of some of their patients. Instead of a "normal" sheet cake, I created an inspirational and whimsical cake for those surviving with the aide of a Ventricular Assist Device. At the request of the hospital, I topped the cake with an edible replica of a heart + VAD. This was my first attempt at making an anatomical heart, and it was pretty clear that I have not studied anatomy since high school...In the end, I was very pleased with the design! Take a look!

South Lake Tahoe Wedding + more

Over the weekend, I had the opportunity to deliver a beautiful wedding cake up to South Lake Tahoe. The venue was gorgeous, and I wish I had snapped a few pics of the decor.

The bride had given me the artistic license to design the cake. Sugar red tulips were her only request. I have to say, I was very pleased with my gumpaste Parrot Tulips. I hope the pics give them justice! Because of the dark red color, the petals were originally "chalky" and "ashy" looking once they dried. After the petal and luster dust was applied, I briefly swirled them over some steam from the stove to brighten up the color. It worked! I wish I had made more flowers....

TFCS's first magazine appearance has arrived!

A few months ago, I created a variety of mini cakes for a wedding photo shot. Local event planners Nouvelle Roux were shooting a photo spread for "Our Wedding" magazine and asked me to contribute miniature wedding cakes for their design. I gladly accepted the request, of course. Sacramento Magazine's "Our Wedding" fall/winter issue is in stores NOW! Go check out the beautiful landscape Nouvelle Roux created! I am very thankful for this opportunity and excited about the photos they captured of my designs.

Since I made the big move to Old Soul Co. a month ago, I've had overwhelming success! It really is true- too many cakes, too little time for blogging. So tragic!

Here's a quick update to get us started: currently sub-leasing bake space from Old Soul Co. in midtown Sacramento(come try their delicious parties and in-house roasted coffee!), guitar cake for local artist's birthday celebration, Revell Communications with Tiffany & Co., Sacramento Ballet event, etc.

A simple, yet elegant cake for a baby shower in my neighborhood of East Sacramento. The cake was ordered by some new friends of mine from the East Sacramento Chamber of Commerce. Thanks Lisa for your support!

My first guitar cake! Although not quite to scale and in need of a few improvements, I was pretty proud of this one =)

The cake was created to help celebrate the birthday of local artist Josh Ahlansberg, of the Silver Darling.

The strings were made of spaghetti! Every part of this cake is completely edible.

Sorry, no diamonds in this Tiffany box, only cake. My deepest apologies...

Not your average Tiffany box cake:

This cake was created for Revell Communications (as in Dennis Revell, son-in-law to Ronald Regan). The cake was to duplicate the display for the grand opening of Tiffany & Co. at the Roseville Galleria and was delivered to the PR firm's office for their client meeting.

Before cake, dance had always been my creative outlet. I have always been a huge supporter of the arts, and finally had the opportunity to really participate in contributing to our local ballet.

The dancers of the Sacramento Ballet have been taking action in Sacramento for the last few months to battle our suffering economy. They have scheduled numerous performances and events within the community to help keep the arts alive. I was able to donate to their silent auction at their S.O.S Ballet event (Save our Sac Ballet). Below is the tiered cake I contributed, along with a gift certificate for the lucky winner:

Movement of Design: Sacramento

Last weekend was the first ever MODSAC event. I had the opportunity to create a cake for the event- to be shared by the other participating artists. I attempted to capture the design from the event flyer. This is probably my favorite design thus far. Although, every new cake is my new-favorite =)

Extra tall cake (about 6" high!) = lots of turquoise buttercream

This particular cake was dress-inspired. Coincidentally, it just happened to be Fashion Week in my all-time favorite city, NYC. All parts are made of sugar.

I really enjoyed creating the concept and design for this cake. I love finding inspiration and gaining ideas from other works of art and fashion. Making elements appear realistic, yet still edible, has become an exciting challenge.

Too many cakes, not enough blogging!!

I've been very busy makin' cakes and gearing up for Valentine's Day the last couple weeks. Unfortunately, I did not have a chance to take pictures of all of the orders, but here are some of my best work!

Fondant "Love Birds" for my parents' anniversary!

Vanilla Cake with Chocolate Ganache filling and frosting. Pretzel and toasted coconut bird's nest.

Isn't it adorable? I was very happy with the results of this cake. Too cute. Could be used for Valentine's Day too!!

Here are some shots of my first gumpaste flower spray! I went a little over-board with the luster dust, but had too much fun painting them to make them more realistic. Too bad real flowers don't shimmer as much....

I don't particularly enjoy decorating sheet cakes. I always feel so limited by the huge, awkward shape. Although, I was satisfied with this 50th birthday cake.

Have I ever mentioned how much fun it is to make cakes for lil girls? Possibilities of bows, ruffles, and flowers are endless!!!

This chocolate cake was created for a joint princess birthday. Draped with edible pearls, sugar flowers, and sparkling rings, this hat box cake was as a delight to make and design.

Play Ball!!

It's a birthday baseball hat! Carrot cake for a Giants fan!

This was my first attempt at a craved baseball cap. I have to admit, it was a lot easier than I thought it would be. Even though I tend to be my worst critic, I honestly am proud of this creation- aside from the wonky MLB logo on the back, lol. The carrot cake was iced in vanilla buttercream and covered with fondant. The bill and logo hand-crafted out of orange gumpaste.

I forgot the rivets, but the stitching details turned out fairly realistic

Last week was my brother/roommate/Ryan's birthday. He has a strong love for music and has been an artist for about 18 years. From drums to guitar, teaching to recording, he has done it all! For Ryan's 28th, I decided to create a turntable cake. For a first try, it turned out pretty good. Although it is not to scale, and the colors are quite retro, it was still a mini success for me!

Last week, I had the opportunity to travel to New York City and study with Elisa Strauss. Strauss is the owner of Confetti Cakes, and one of the most talented and creative cake designers today. After working with her last June, I took the opportunity to brush up on my decorating skills and learn new techniques. With her guidance, I was able to replicate her handbag cake design. Big News for The Frosted Cake Shop!

As some of you know, I had the opportunity to study in New York with Elisa Strauss, owner of Confetti Cakes. As one of the top pastry chefs in the country, Elisa just might be my cake idol. With her second book to be released this month, I feel so lucky to be able to squeeze some time in for another lesson. I will be granted with another amazing opportunity to work with her in her NYC kitchen this week. Stayed tuned to see what we do!!!

Oh Martha, you've done it again! Martha Stuart, and her amazing recipes- you really can't beat it! I was a little uncertain at first sight of this combination, but it was a taste explosion!! I introduce to you: Mocha Spice Cake with Chocolate Buttercream

In honor of autumn, I wanted to create some realistic fall leaves. Although those in nature don't generally have glitter, I believe I did I pretty fantastic job here =)

Time for your close-up!

I swirled leaf green, meadow green, gold, and brown gumpaste to achieve the perfect color for this project. I cut the leaves free-hand, before pressing them into their veiner. They were dusted with a combo of green and gold luster dust.

Okay, I know the flowers look a little more Christmas than fall, but I still like it =)

Cake Tasting: Rewind

A few weeks ago, my generous parents held a cake tasting at their home. The event was a complete success! I was swamped and too busy to photograph the desserts on display. Thankfully, one of my cake enthusiast neighbors saved the day! Here are some of her fabulous pics!!

The purple is a bit much, but this mini tiered cake was filled with the most delicious strawberry cream. Bow and flowers are made of gumpaste.

These mini cakes were not actually for taste testing, but just to give me a chance to show off a little =) I love decorating this size! They are so much fun.

Typical sheet cake- not my most favorite to decorate. Chocolate cake with fudge and raspberry filling. Fudge frosting and butercream leaves.

Banana Cupcakes with Cream Cheese Frosting. One of my favorites! Coloring the gumpaste flowers with petal and luster dusts was the best part =)

My mother, and biggest support and helper, made me these adorable bumble bees to decorate my honey and apricot cupcakes.

Hungry as a Horse!!

For being an amateur at farm animal construction, I am very delighted at my first gumpaste horses. I was a little nervous at the idea of a ranch/western theme cake, having no experience with horses or anything of the likes. With a little research and imagination, I attempted my first edible farm figures.

Although I don't think sheet cakes ever turn out as cute as rounds, I was very satisfied with my final project. This picture was before the edible horse shoe was added.

This might be one of my new favorite cakes!! I love the giant Gerber daisies and how they shimmer in the sunlight of my kitchen. The leaves were cut free-hand and shaped to give them movement. Hope the Birthday Girl enjoys it!!

After an amazing trip to New York, I rushed back to make a cake for Ethan's 2nd birthday. I have really learned to love children's cakes when I get to use bold colors and bright ideas. I was 'fired-up' after my classes in NYC and could not wait to put my new skills to work. I think I am in love with covering cake boards- it makes such a difference! The party had a "Cars" theme.

All Decorations are made of Gumpaste.

Earlier this week, I had one of the greatest opportunities in my cake designing career. I went to New York with my brother and 2 girlfriends of mine for 5 days. While I was visiting, I had a private lesson with cake designer Elisa Straus, owner of Confetti Cakes, at her uptown kitchen. She creates the most beautiful designs out of her commercial kitchen in the Upper West Side. I was so grateful to work with such an inspirational and talented staff. Over the two-day lesson, I learned a variety of techniques and tips that will definitely help my career progress. I was able to make one of her signature cakes, as well as practice other decorating skills. Here are some pics of our creation!!
